Snickerdoodle Paleo Pancakes

These snickerdoodle paleo pancakes are a great paleo, gluten free, and healthy breakfast option!

Ingredients

1 1/2 cup almond flour

2 eggs

1 tbsp coconut flour

1 cup unsweetened almond milk

1 scoop vanilla protein powder

1 tbsp cinnamon

2 tbsp coconut sugar

1 tbsp honey

1 tsp vanilla

Method

  1. Heat a skillet over low medium heat
  2. Whisk the eggs in a bowl
  3. Add in the rest of the ingredients and mix together
  4. Grease the skillet with ghee, butter, or oil ( I like olive or coconut)
  5. Use a spoon to make mini pancakes- about 1 1/2 spoonfuls
  6. Cook the pancakes until they start bubbling, a few minutes on each side
  7. Serve with whatever toppings you want! I used bananas, honey, and cinnamon
