Spicy Chickpea Salad

Healthy Spicy Chickpea Salad (gluten free, no cook)

Ingredients

Chickpea Salad:

  • 1 15 ounce can chickpeas
  • 1 large English cucumber
  • 1 cup cherry tomatoes
  • 1 cup sliced peperoncini
  • 1/4 cup sliced green onion
  • 1 bell pepper
  • 8 ounce feta

Dressing:

  • 1/4 cup olive oil
  • 1 tsp garlic powder
  • 1 tbsp hot sauce
  • 1 tsp oregano
  • 1 tbsp juice from the peperoncini jar

Method

  1. Dice the cucumber, bell pepper, onions, and tomatoes. I use a food processor on the chip setting to make this easier.
  2. Add to a bowl with the chickpeas, peperoncini, and feta.
  3. Stir together
  4. In a small bowl, make the dressing
  5. Pour on top of the veggies and chickpeas and mix together
  6. Serve with pita bread or toast! Makes enough for about 4-5 meals.
  7. Also like to add fresh avocado on top!
