Spicy Chickpea Salad
Healthy Spicy Chickpea Salad (gluten free, no cook). This greek inspired spicy salad is the perfect healthy meal prep lunch recipe

Ingredients
Chickpea Salad:
- 1 15 ounce can chickpeas
- 1 large English cucumber
- 1 cup cherry tomatoes
- 1 cup sliced peperoncini
- 1/4 cup sliced green onion
- 1 bell pepper
- 8 ounce feta
Dressing:
- 1/4 cup olive oil
- 1 tsp garlic powder
- 1 tbsp hot sauce
- 1 tsp oregano
- 1 tbsp juice from the peperoncini jar
Method
- Dice the cucumber, bell pepper, onions, and tomatoes. I use a food processor on the chip setting to make this easier.
- Add to a bowl with the chickpeas, peperoncini, and feta.
- Stir together
- In a small bowl, make the dressing
- Pour on top of the veggies and chickpeas and mix together
- Serve with pita bread or toast! Makes enough for about 4-5 meals.
- Also like to add fresh avocado on top!
