Summer Roll Bowl
Asian inspired summer roll bowl 🥕🥬🌶️Is it too hot for anyone else to turn their oven on right now?! 🙋‍♀️we had a big heat wave this past week so I’m sharing everything I made that didn’t require my oven o. This salad is LOADED with veggies which I love! Ingredients
2 cups chopped romaine lettuceÂ
2 cups shredded rotisserie chickenÂ
1 chopped bell pepperÂ
1 cup chopped cucumberÂ
1/2 cup shaved carrotsÂ
1 cup chopped cabbageÂ
1 avocado, choppedÂ
2 cups cooked rice noodlesÂ
Sauce:
1/2 cup almond butterÂ
1 tbsp maple syrupÂ
1 tsp lime juiceÂ
1 tbsp coconut aminos or soy sauceÂ
1/4 cup water
Method
Add of the veggies, chicken, & cooked rice noodles together.
Cook the rice noodles according to package instructions & let cool completely before adding.Â
In a food processor or blender, mix the sauce ingredients.Â
Mix the salad togetherÂ
Pour the sauce on top or save to add as you eat it throughout the week!Â
