Taco Stuffed Sweet Potatoes
A healthy, paleo, gluten free, grain free dinner packed full of flavor!

Ingredients
2 sweet potatoes
1 pound grass fed beef
1 avocado
2 Peppers
1 Onion
1 packet of fajita seasoning (I use Primal Palate taco seasoning)
Avocado Oil
Method
Sweet Potato Instructions:
- Preheat oven to 400F
- Poke holes in the sweet potatoes with a fork
- Bake for 5o minutes
Taco Filling:
- Preheat the oven to 400F
- Cut the two peppers and onion up
- Spray a pan with nonstick spray or use silicone baking sheets
- Coat the veggies in a tbsp of avocado oil and sprinkle with about 1/4 of the packet- more if you like more spice
- Bake the veggies for 15 minutes
- For the beef, heat a skillet over medium heat, add in avocado oil, then add the beef in. Season with 1/4 of the packet and cook until done- about 10 minutes.
- Served with mashed avocado on top!
Notes
*I make my sweet potatoes a few days before or the night before to save time then just reheat to pair with the meal!
