<p class="wp-block-paragraph">Any recipe that allows me to layer on the avocado just earns bonus points in my book! Everything just tastes better with avocado or salsa on top haha. Especially these turkey stuffed peppers!</p>



<p class="wp-block-paragraph">I went to get all my ingredients ready and realized I didn&#8217;t have my go to fajita packet (I like the Primal Palate ones) so I improvised with a little homemade fajita mix! Just paprika, cumin, garlic powder, and a sprinkle of pink Himalayan salt! So easy and so tasty!!</p>

<p class="wp-block-paragraph">You can find a pack of peppers at Aldi for $2.99.. a pretty good deal versus buying them individually! I also got ground turkey from there which is also reasonably priced! All together, I would say this meal was under $8 total to feed 2 people + leftover cooked turkey! Woooo for saving money + still eating yummy meals.</p>

<p class="wp-block-paragraph">This is actually one meal Eli loves to eat which is such a bonus because it&#8217;s so simple to make! All you have to do is cook the turkey, sweet potato, onions, and zucchini in a skillet over medium heat for about 10 minutes. You don&#8217;t have to use those exact veggies either- just whatever you have on hand! I sprinkled with the seasoning I made before cooking.</p>

<p class="wp-block-paragraph">Then while the turkey cooked I prepared the peppers. I took a small knife, cut them in half, then scooped out the membrane part and the seeds. Once the turkey was ready, I used my <a href="https://rstyle.me/n/da6y2echetx">Amazon baking sheets</a> (such a lifesaver!), a pan, laid out the peppers, then added the turkey mix in! Baked for 15 minutes at 400F.</p>



<p class="wp-block-paragraph">When they were done, I topped with avocado, jalapeños, and red pepper flakes! Basic but the perfect toppings for this meal!</p>



<p class="wp-block-paragraph">A perfect dinner for the whole family or a perfect meal prep for one! Either way, you can&#8217;t go wrong! Hope you love it as much as I did- even if you decide not to top it with avocado haha. I&#8217;ll forgive you.</p>

					    <ol>
<li id="instruction-step-1">Preheat oven to 400F and heat a skillet over medium heat</li>
<li id="instruction-step-2">Mix the paprika, cumin, garlic powder, salt, and chili powder in a small dish</li>
<li id="instruction-step-3">Combine sweet potato, zucchini, onions (all cut up) into the skillet with the ground turkey. Add the seasoning and mix everything together</li>
<li id="instruction-step-4">Cook until turkey is brown- about 10 minutes</li>
<li id="instruction-step-5">While the turkey and veggies cook, wash the peppers. Cut them in half and take out the middle + the seeds</li>
<li id="instruction-step-6">Line a baking sheet with foil, silicone baking sheets, or nonstick spray</li>
<li id="instruction-step-7">Once the turkey is done, stuff the peppers with as much as you can fit</li>
<li id="instruction-step-8">Bake at 400F for 15 mins</li>
<li id="instruction-step-9">Top with whatever you feel like!</li>

<p class="wp-block-paragraph">I always forget about my crockpot! Seriously- is there any better cooking invention that makes cooking easier? My wonderful future mother in law got my crockpot for me before I moved out on my own in college but I never really used it. I remember thinking I&#8217;d mess up a meal and ruin so many ingredients. Hopefully I wasn&#8217;t the only one with that silly fear as a first time cook haha.</p>

<p class="wp-block-paragraph">If only I had this healthy crockpot turkey chili to get me through the last two winters at school! We lived in an old house that was ALWAYS cold. Four poor college students were not about to pay to heat a 100 year old house. This chili would have been perfect for us on those nights huddled around our table in layers haha.</p>



<p class="wp-block-paragraph">I prepped the chili at 10:00pm the night before, tossed everything in the crockpot, and it was ready the next morning when I got up! I set my crockpot for 8 hours on low heat. This worried me at first that the chili would be bad if it sat out an hour. The nice thing is crockpots have a warming setting to keep your food warm even after it is done! Nice to know for next time!</p>

<p class="wp-block-paragraph">This healthy crockpot turkey chili makes a big batch. Enough for two people for at least three, probably four meals. I asked my fiancé, Eli, if he was excited to have chili for the week. His response? &#8220;Uh.. I don&#8217;t really like chili&#8230;&#8221; Haha but after tasting this even he approved!</p>



<p class="wp-block-paragraph">I&#8217;m excited to have leftovers to create a bunch of fall recipes with! That&#8217;s my favorite part of making new meals- seeing how many different ways I can use the leftovers!</p>

<p class="wp-block-paragraph">This meal will be perfect for football Sundays or family gatherings this winter! I am already excited to make it when I go home for Christmas to see if my stepdad enjoys it haha.</p>

<p id="instruction-step-4">Get your crockpot out, either line it (I use these <a href="https://rstyle.me/n/da2hf7chetx">crockpot liners</a>) or spray it</p>
<p id="instruction-step-5">Combine all the ingredients into the crockpot and stir them together</p>
<p id="instruction-step-6">Cook on low heat for 8 hours.</p>
