Vegan and Gluten Free Pumpkin Oatmeal Cookies

Pumpkin Oatmeal Cookies (vegan, gluten free, healthy)

Ingredients

Cookies:

1 1/2 cup quick oats (can use gluten free to keep this recipe GF!)
1/4 cup pumpkin
1 tsp pumpkin pie spice
1 cup peanut butter
1/2 cup maple syrup

Icing: 

Melted Coconut Butter

Method

  1. Mix everything together in a bowl
  2. I sprayed my hands with a little non stick spray because the batter is sticky.
  3. Form balls with the dough then add onto a greased baking sheet.
  4. Makes 9 cookies. Then press them down a little
  5. Preheat oven at 350F then bake for 14-15 minutes.
  6. Let them cool then add your icing on top!
  7. I used  coconut butter but you can use a little mixture of powdered sugar and milk too. 
  8. Just add a tiny splash of milk to 1/3 cup powdered sugar
  9. Makes 9 cookies
