Vegan and Gluten Free Sweet Potato Casserole

1 small casserole
Sweet Potato Casserole (vegan, gluten free, paleo)

Ingredients

Sweet Potato Filling: 
3 cups chopped sweet potatoes
(About 3 sweet potatoes)
2 tbsp coconut sugar
2 tbsp melted coconut oil
1/4 cup almond milk
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
Topping:
1/2 cup pecans
1/4 cup almond flour
2 tbsp coconut sugar
1 tsp cinnamon

Method

  1. Heat a medium pot of boiling water
  2. Peel and cube the sweet potatoes
  3. Boil for 15ish minutes, until they’re totally soft
  4. In a bowl, mash the sweet potatoes
  5. Then add in the rest of the casserole ingredients
  6. Mix together well.
  7. Grease a small casserole dish  and add the sweet potato mixture in.
  8. In a food processor, add the pecan topping ingredients and pulse together
  9. Add on top of the sweet potato mixture
  10. You can add a handful of whole pecans if you want them for texture!
  11. Baked at 400F for 20 Minutes.
  12. if you add marshmallows,  add them right at the end and broil!

Notes

*This makes a small casserole. If you want a larger one, make sure to double the recipe!
