Vegan Banana Bread Bites

Banana Bread Bites {vegan, gf}

Ingredients

3 ripe bananas
1/3 cup peanut butter
2/3 cup coconut flour
1/3 cup maple syrup
1 tsp baking powder

Method

  1. In a bowl, mix all of the ingredients together well.
  2. Line an 8×8 brownie pan with parchment paper (makes it easy to remove)
  3. Add the banana bread batter in
  4. Bake at 350F for 32-34 minutes.
  5. These are pretty soft so you can put them in the fridge to firm up for 30 minutes if you want.
  6. Or let them cool on the counter, slice, add some more Pb, and enjoy! Store in the fridge 4-5 days.
  7. I cut mine into 16 squares to make them bite sized.
