GF, Vegan Blueberry Banana Bread

Ingredients
3 flax eggs (1 flax egg is 1 tbsp flaxseed meal + 2.5 tbsp water)
3 mashed bananas
1/4 cup nut butter
1/4 cup + 2 tbsp coconut flour
1 1/2 tbsp cinnamon
1/3 cup unsweetened almond milk
1 tsp baking powder
1 tsp vanilla
1 tsp coconut sugar*
1/2 cup blueberries, fresh or frozen
Method
- In a small bowl, mix the ingredients together for the flaxseed eggs.
- Let them sit for 7-8 minutes to thicken.
- In a larger bowl mash the bananas then add everything except the blueberries and flax eggs.
- Mix it together well then add in the flax eggs and mix again.
- Finally, add in the blueberries and fold them into the recipe.
- Line a loaf pan with parchment paper and add the batter.
- Bake at 350F for 55-60 minutes.
- Remove and let cool completely before removing from the pan.

*add more if you want a sweeter bread
