GF, Vegan Blueberry Banana Bread

Ingredients

3 flax eggs (1 flax egg is 1 tbsp flaxseed meal + 2.5 tbsp water)

3 mashed bananas

1/4 cup nut butter

1/4 cup + 2 tbsp coconut flour

1 1/2 tbsp cinnamon

1/3 cup unsweetened almond milk

1 tsp baking powder

1 tsp vanilla

1 tsp coconut sugar*

1/2 cup blueberries, fresh or frozen

Method

  1. In a small bowl, mix the ingredients together for the flaxseed eggs.
  2. Let them sit for 7-8 minutes to thicken.
  3. In a larger bowl mash the bananas then add everything except the blueberries and flax eggs. 
  4. Mix it together well then add in the flax eggs and mix again. 
  5. Finally, add in the blueberries and fold them into the recipe. 
  6. Line a loaf pan with parchment paper and add the batter. 
  7. Bake at 350F for 55-60 minutes. 
  8. Remove and let cool completely before removing from the pan.

*add more if you want a sweeter bread
