Vegan Buffalo Mac and Cheese

A healthy, vegan buffalo mac and cheese that is also easily made vegan. Made with cashews, buffalo sauce, almond milk, and nutritional yeast. Super simple and so tasty!

Vegan Buffalo Mac and Cheese

Ingredients

1 cup cashews
1 1/2 cups almond milk
1/2 cup nutritional yeast
3/4 cup buffalo sauce ( I used @primalkitchenfoods)
2 tsp garlic
1 tsp paprika
Sprinkle of salt

Method

  1. Soak the cashews in water  for a minimum of four hours up to overnight.
  2. Drain before adding to the blender.
  3. Then, in a high speed blender add the cashews and the rest of the ingredients
  4. Blend for about 1 minute, until it’s totally smooth
  5. Serve over whatever pasta you want!
  6. Store in an airtight container in the fridge for 3-4 days
