Vegan Buffalo Mac and Cheese
A healthy, vegan buffalo mac and cheese that is also easily made vegan. Made with cashews, buffalo sauce, almond milk, and nutritional yeast. Super simple and so tasty!
Ingredients
1 cup cashews
1 1/2 cups almond milk
1/2 cup nutritional yeast
3/4 cup buffalo sauce ( I used @primalkitchenfoods)
2 tsp garlic
1 tsp paprika
Sprinkle of salt
Method
- Soak the cashews in water for a minimum of four hours up to overnight.
- Drain before adding to the blender.
- Then, in a high speed blender add the cashews and the rest of the ingredients
- Blend for about 1 minute, until it’s totally smooth
- Serve over whatever pasta you want!
- Store in an airtight container in the fridge for 3-4 days
