Gluten Free Vegan Cinnamon Roll Minis
Vegan and Gluten Free Cinnamon Roll Minis. Made with oat flour, vegan greek yogurt, cinnamon, coconut sugar, and other simple ingredients.
Ingredients
Cinnamon Rolls:
- 1/2 cup + 2 tbsp gluten free oat flour
- 1/2 cup vanilla vegan greek yogurt
- 1 tbsp maple syrup
- 1/2 tsp baking powder
- 1/2 tsp Apple cider vinegar
Cinnamon sugar mixture:
- 2 tbsp coconut sugar
- 1/2 tsp cinnamon
Method
- Mix all of the cinnamon roll ingredients together, roll into a ball, if it feels super sticky add an additional 2 tbsp oat flour.
- Put parchment paper on a flat surface
- Add extra oat flour to make sure the dough doesn’t stick.
- Roll out the dough, about 1/4 inch thick. I used a rolling pin but I greased it first so the dough didn’t stick. Meaning I just sprayed a little non stick spray on it.
- Try to roll it into a rectangle as much as possible!
- Then in a small bowl mix the cinnamon sugar mixture
- Sprinkle the mixture on the dough, leaving a little room on the edges.
- Slice the dough longways into about 4 slices
- Then roll them into mini cinnamon rolls
- Add to a small greased microwave safe dish
- Microwave for 3 1/2-4 minutes
- Add melted coconut butter on top and sprinkle a little extra cinnamon!
- Makes 4 mini cinnamon rolls!
