Vegan Pancakes
A vegan breakfast recipe that is also gluten free, paleo, and grain free. These pancakes are an easy and delicious healthy breakfast. Ingredients
3/4 cup almond flour
1/4 cup tapioca flour (can sub cornstarch)
1 tsp baking powder
1 tbsp maple syrup
2 tbsp applesauce (can sub equal amount coconut oil or butter)
1 tbsp softened coconut oil (can sub butter/vegan butter)
1/4 cup almond milk
1 tsp cinnamon
Method
- Mix all of the ingredients together in a bowl. Make sure you don’t melt the coconut oil, it just needs to be a little soft.
- Mix everything together.
- Heat a skillet over low medium heat
- Grease the skillet and add a spoonful of batter to it.
- Cook for 2 mins, flip, cook for 2 more.
- Remove and repeat. Makes 6-7 small pancakes.
