Vegan Pumpkin French Toast Stuffed with Vegan Cream Cheese

Vegan Pumpkin Stuffed French Toast

Ingredients

  • 1 tbsp flaxseed meal + 2.5 tbsp water
  • 5 thick slices of bread
  • 1/2 cup vegan cream cheese
  • 3/4 cup unsweetened almond milk
  • 2 tbsp organic pumpkin purée
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla
  • 23 tsp maple syrup depending on how sweet you want it

Method

  1. Combine the flaxseed and water into a small bowl and let it sit for 5 minutes
  2. In a large shallow bowl, mix together the milk, cinnamon, pumpkin pie spice, pumpkin puree, vanilla, and maple syrup
  3. Then add in the flax egg
  4. add 1- 1 1/2 tbsp cream cheese to one slice of bread and fold in half
  5. Soak the bread in the french toast mixture
  6. repeat for each slice
  7. cook for 3-4 minutes in a skillet over low medium heat in coconut oil
  8. enjoy!
