Vegan Salted Caramel Ice Cream {paleo, gluten free}

Ingredients

Ice Cream: 

3 frozen bananas
3 tbsp cashew butter
Sprinkle of sea salt
Caramel layer:
1/2 cup dates
1/3 cup unsweetened almond milk
1/2 tsp vanilla
1/4 tsp sea salt

Method

  1. Soak the dates in warm water for 1-2 hours.
  2. Then remove the pits and chop. Set aside
  3. In a blender, combine the ice cream ingredients and blend until smooth.
  4. Add the the freezer while you make the caramel layer
  5. In a blender or food processor, add the dates, almond milk, vanilla, and salt. Blend or puree.
  6. Remove the ice cream from the freezer and stir in the caramel layer. You could add chopped nuts or chocolate chips here too.
  7. Serve and enjoy! It melted kind of quickly so don’t wait too long
