Vegan Taco Stuffed Zucchini Boats

Ingredients
3 zucchini
1 package extra firm tofu
1 packet taco seasoning
1/2 cup salsa
1/2 red onion
Toppings:
vegan feta cheese
avocado
Method
- Cut the zucchini in half, take a spoon, scoop out the middle, put in a bowl, set aside, repeat for each zucchini
- preheat oven to 400F
- grease a baking sheet
- add the zucchini
- bake for 15 minutes
- You can press your tofu for 5-20 minutes. You wrap it in a towel and place heavy plates on it. The longer you press, the crispier it will be.
- heat a skillet over medium heat
- Add oil, diced onion and diced leftover zucchini
- In a bowl, crumble the tofu and add taco seasoning
- Once the onion and zucchini have been cooking for a few minutes, add the tofu
- Add the salsa
- Cook for about 5-8 minutes
- Remove the zucchini, add the tofu, and add vegan feta on top
- bake for 5 more minutes
- remove and enjoy!
