Vegan Tortellini Pasta Salad

Vegan Tortellini Pasta Salad. A healthy no reheat meal prep lunch that is vegan.

Vegan Tortellini Pasta Salad

Ingredients

  • 2 9 ounce packages of vegan tortellini
  • 1/4 cup diced onion
  • 1/2 cup halved cherry tomatoes
  • 2 tbsp chopped basil
  • 810 ounce package of vegan mozzarella
  • 1 tsp garlic
  • Salt and pepper to taste
  • 2 tbsp olive oil

Balsamic glaze:

  • 1/4 cup balsamic vinegar
  • 1 1/2 tbsp coconut sugar

Method

  1. Heat a saucepan over low heat and add balsamic vinegar.
  2. Stir in coconut sugar:
  3. Let simmer for 10-15 minutes until it thickens
  4. While it simmers, cook the pasta.
  5. Then rinse with cold water and let it cool
  6. Add in onions, tomatoes, basil, olive oil, mozzarella (rolled into balls or cut), garlic, and salt.
  7. Stir
  8. Drizzle with the balsamic glaze.
