Winter Quinoa Salad
Such an easy & tasty salad! Anything with goat cheese is my favorite. This salad doesn’t take long to make & it is delicious!

Ingredients
Salad:
1 1/2 cups cooked quinoa
2 1/2 cups mixed greens
1 small apple, diced
1 orange, peeled & diced
1/3 cup pomegranate seeds
1/3 cup pistachios
2 ounces goat cheese
Dressing:
3 tablespoons apple cider vinegar
1 1/2 tablespoons olive oil
1 tsp garlic powder
2 teaspoons dijon mustard
2 teaspoons honey
Salt and pepper to taste
Method
- Cook quinoa according to package instructions
- Let it cool then assemble the salad
- Add spinach, quinoa, orange slices, pomegranate seeds, apples, pistachios, & goat cheese to a large bowl
- Toss the salad
- In a small bowl, whisk the dressing ingredients together
- Pour over the tossed salad
- Serve & enjoy!
