Winter Quinoa Salad

Such an easy & tasty salad! Anything with goat cheese is my favorite. This salad doesn’t take long to make & it is delicious!

Ingredients

Salad:

1 1/2 cups cooked quinoa

2 1/2 cups mixed greens

1 small apple, diced

1 orange, peeled &  diced

1/3 cup pomegranate seeds

1/3 cup pistachios 

2 ounces goat cheese

Dressing:

3 tablespoons apple cider vinegar 

1 1/2 tablespoons olive oil

1 tsp garlic powder 

2 teaspoons dijon mustard

2 teaspoons honey

Salt and pepper to taste

Method

  1. Cook quinoa according to package instructions 
  2. Let it cool then assemble the salad 
  3. Add spinach, quinoa, orange slices, pomegranate seeds, apples, pistachios, & goat cheese to a large bowl 
  4. Toss the salad 
  5. In a small bowl, whisk the dressing ingredients together 
  6. Pour over the tossed salad 
  7. Serve & enjoy!
