Zucchini Noodle Egg Baskets

A simple paleo, gluten free, grain free breakfast that is ready in 10 minutes!

Ingredients

1 medium sized zucchini

2 eggs

Oil of choice- I like avocado oil

Red pepper flakes

Avocado

Method

  1. Spiralize the zucchini- I used my Kitchen aid attachment
  2. Heat a skillet over low/medium heat, add avocado oil
  3. Form little baskets with the zoodles and crack eggs in
  4. Cook for about 10 minutes- until the eggs are done to your liking!
  5. Served with avocado and red pepper flakes
