15 Minute Tomato Soup (vegan, gluten free)

Ingredients

  • 1 tbsp olive oil
  • 1 white onion
  • 2 15 ounce cans diced fire roasted tomatoes
  • 1 cup veggie broth
  • 2 tsp garlic powder
  • 1/4 cup fresh basil
  • 1/4 cup coconut cream (or half and half)
  • Sprinkle of salt and pepper to taste

Method

  1. In a large pot or Dutch oven, add the olive oil and diced onion. Cook over medium heat until softened (just a few minutes)
  2. Then add the tomatoes, veggie broth, basil, garlic, and salt + pepper. Let this come to a boil then remove from heat
  3. You can either use an immersion blender to blend in the pot or let it cool a little and add to the blender.
  4. Whatever method, blend until smooth and if you remove it from the pot pour it back in.
    add the coconut cream and stir
  5. For the grilled cheese:
  6. Air fry for about 3-4 minutes on each side at 375F!
  7. Make it however you like!
