Baby Led Weaning Egg Cups
These red pepper, kale, & feta baby led weaning cups are one of my favorite recipes to make for Palmer! Of course, always follow your pediatrician’s recommendations when it comes to solids for your baby.
Ingredients
8 eggs
1 red pepper, finely chopped
1/4 cup red onion, finely chopped
1/2 cup kale, finely chopped
1/4 cup crumbled feta
1 tsp oregano
1 tsp garlic powder
2 tbsp olive oil
Method
Preheat oven to 375F
In one bowl, add the eggs and whisk
Then add the red pepper, kale, onion, oil, spices, & feta
Stir together with a spatula
I like to use silicone muffin tins for this recipe
Add the egg mixture to the muffin tin, filling about 3/4 of the way up
Add to the oven and bake for 20-22 minutes
Let cool and then remove
Makes 12 cups
