Carrot Cake Donuts {paleo, gluten free, healthy}

Ingredients

Carrot Cake Donuts

2 eggs  
1 cup almond flour
3 tbsp maple syrup
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1 tsp vanilla
1 tsp baking powder
1/2 cup shredded carrots
1/4 cup chopped pecans

Icing:
Paleo option:
1/4 cup coconut butter

2 tbsp maple syrup
Other option:
1/2 cup powdered sugar 

2 tsp almond milk 

Method

  1. Preheat oven to 350F
  2. Whisk 2 eggs then add in all of the other carrot cake donut ingredients
  3. Mix everything together well.
  4. Add to a greased donut pan, filling about 3/4 of the way.
  5. Bake for 18-20 minutes
  6. Makes 7 donuts.
  7. Icing:
  8. Paleo option: coconut butter melted and mixed with 2 tbsp maple syrup
  9. Other option: 1/2 cup powdered sugar + 2 tsp almond milk mixed together.
  10. Wait for the donuts to cool then add the icing on top. You can let the icing harden or eat right away.
