Crockpot Chicken Parmesan Soup

This easy Crockpot Chicken Parmesan Soup has all the cozy, cheesy flavors of classic chicken parmesan in soup form. Made with tender shredded chicken, tomatoes, pasta, parmesan, mozzarella, and a creamy broth, it’s the perfect easy slow cooker dinner for fall and winter.

Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 (15-ounce) can diced tomatoes
  • 1 cup pasta sauce of choice
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • Ground black pepper, to taste
  • 2 teaspoons Italian seasoning
  • 1 cup Parmesan cheese, shredded or grated
  • ½ cup mozzarella cheese, shredded
  • 1 cup heavy whipping cream
  • 8 ounces pasta, uncooked

Method

  1. Add the chicken breasts, diced tomatoes, pasta sauce, chicken broth, salt, garlic powder, black pepper, and Italian seasoning to the crockpot.
  2. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.
  3. Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  4. Stir in the uncooked pasta. Cover and cook for about 30 minutes, or until the pasta is tender. Cooking time may vary depending on the type of pasta used.
  5. Stir in the Parmesan cheese, mozzarella cheese, and heavy whipping cream.
  6. Continue stirring until the cheese is melted and the soup is creamy and well combined.
  7. Serve warm with additional Parmesan cheese on top, if desired. Enjoy!

  • Pasta: Rotini, penne, shells, bowties, or another short pasta shape all work well.
  • Watch the pasta: Begin checking the pasta around the 20-minute mark to prevent it from becoming too soft.
