Crockpot Tomato Soup and Grilled Cheese

Crockpot Red Pepper & Tomato Soup + Sheet Pan Grilled Cheese. Make dinner for a group without much stress or fuss! Throw everything in the crockpot + then before you’re about to serve the soup, make the grilled cheese.

Ingredients

Soup: 

1 tbsp olive oil

1 white onion, chopped 

2 red bell peppers, chopped

2 28oz cans plum tomatoes

1 cup vegetable broth

½ teaspoon salt

1/2 tbsp garlic

Grilled Cheese: 

6 slices of bread 

6 slices of cheese 

3 tbsp butter

Method

Soup:

Add all of the soup ingredients to the crockpot 

Cover and cook on high for 4 hrs or low for 8 hrs 

Add soup to a blender and blend until smooth

Grilled Cheese:

Instructions:

Preheat oven to 450F

Line a pan with parchment paper and add bread to the pan 

Add butter to 3 slices of bread, add cheese to the other 3 slices 

Bake for 5 minutes, remove, then combine into sandwiches 

Bake for another 4-5 minutes 

Remove, cut into small squares, add on top of soup 

Serve and enjoy!
