Ingredients
- 2 pie crusts
- 2 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 cup mozzarella cheese, grated
- 1/4 cup ham, chopped
Method
- Preheat oven to 375°F and spray a 24-cup mini muffin tin with nonstick spray.
- Let pie crusts sit at room temperature for 15–20 minutes. Then use a biscuit cutter or cookie cutter that’s about 2½-inches and press into muffin cups.
- In a bowl, whisk together eggs, milk, and salt.
- Add 1 tablespoon cheese and a small amount of ham into each muffin tin
- Then pour egg mixture into each cup, filling just below the top.
- Bake for 25–30 minutes, until golden brown and set.
- Cool slightly, remove, and serve warm.
