Easy Winter Salad
A delicious, easy healthy salad that will be on repeat all winter! Perfect for the holidays or for a healthy meal prep option!
Ingredients
Kale-
6 cups Simply Nature Organic Kale
Drizzle of Simply Nature 100% Pure Avocado Oil
Sprinkle of salt
Sweet potatoes-
3 medium sweet potatoes
3 tbsp Simply Nature 100% Pure Avocado Oil
Sprinkle of salt
Brussel sprouts-
1 lb brussel sprouts
1 1/2 tbsp Simply Nature 100% Pure Avocado Oil
2 tbsp Specially Selected 100% Pure maple syrup
Sprinkle of salt
Cranberries-
1/2 cup fresh cranberries (or you can use Southern Grove dried cranberries from ALDI)
Sprinkle of sugar of choice
1/2 tbsp Simply Nature 100% Pure Avocado Oil
Other Toppings-
1/2 cup pecans
Emporium Selection Parmesan Cheese
Maple Vinaigrette:
1/4 cup Simply Nature 100% Pure Avocado Oil
1/4 cup balsamic vinegar
2 tbsp Specially Selected 100% Pure maple syrup
1/2 tbsp Dijon Mustard
1/2 tsp Simply Nature Organic Garlic Powder
1/4 tsp salt
Method
- I made the cranberries ahead of time or you can use store bought!
- I cut the cranberries in half and coated them with the avocado oil + sugar. Then baked at 200F for 3 hours. Stored in the fridge until I was ready to use!
- For the sweet potatoes, I diced them and coated with the avocado oil and salt. Then baked at 400F for 40 minutes, flipping halfway through
- For the brussel sprouts, I cut them in half and coated with the avocado oil, maple syrup, garlic powder, and salt. Baked at 400F for 40 minutes
- For the kale- right before the veggies were done I added it to a bowl and drizzled avocado oil on it. I then massaged the oil into it and sprinkled salt. Delicious!
- For the maple vinaigrette, I just combined everything in a food processor.
- Assemble the salad, top with pecans and as much Parmesan as you want!
