7 mini waffles 1x
Healthy Pumpkin Waffles (gluten free, paleo)

Ingredients

3 eggs

1/2 cup pumpkin purée
1 1/2 cups almond flour
1 tsp vanilla
1 tsp baking powder
1 tsp pumpkin pie spice
2 tbsp coconut sugar
1/4 cup unsweetened applesauce

12 tbsp vanilla collagen or protein* 

Method

  1. Whisk the eggs in a bowl
  2. Mix everything else  together
  3. Heat your waffle iron
  4. Grease it with some nonstick spray, add your batter.
  5. Let the waffles cook according to the timer on your waffle maker.
  6. I topped these with butter (it melted before I could take a pic) + maple syrup!
  7. Makes 6-7 mini waffles
