Ingredients
For the Salad:
- 2 cups shredded rotisserie chicken
- 1/4 cup salami, diced
- 1/2 cup pepperoni, diced
- 1/4 cup provolone cheese, diced
- 1/4 cup crumbled feta cheese
- 2/3 cup diced tomatoes
- 1/3 cup mild peperoncini, diced
- 1/2 red onion, diced
For the Dressing:
- 1/4 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 1/4 cup grated parmesan cheese
- 3 tablespoons red wine vinegar
- 1–2 tablespoons pepperoncini juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Freshly cracked black pepper, to taste
- Salt, to taste
Method
- In a medium bowl, whisk together the mayonnaise, Greek yogurt, parmesan cheese, red wine vinegar, pepperoncini juice, oregano, garlic powder, salt, and black pepper until smooth.
- In a large mixing bowl, combine the shredded chicken, salami, pepperoni, provolone cheese, feta cheese, tomatoes, peperoncini, and red onion.
- Pour the dressing over the salad mixture and toss until everything is evenly coated.
- Serve immediately or chill for 30 minutes before serving for even more flavor.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
