One-Pan Healthy Taco Casserole
This One-Pan Taco Casserole is an easy one-dish dinner packed with seasoned ground chicken, rice, black beans, bell peppers, and melty cheese. It’s the perfect family-friendly weeknight meal that’s full of bold taco flavor and simple ingredients!
Ingredients
- 2 lbs ground chicken, turkey, or beef
- ½ medium onion, diced
- 2 bell peppers, diced
- 1 packet taco seasoning
- 2 cups chicken broth
- 1 (15-ounce) can black beans, drained and rinsed
- 1 15 ounce can corn, drained
- 1 cup uncooked white rice
- 1½ cups shredded cheddar cheese or Monterey Jack cheese, divided
- 2 Olive oil
Method
1 Preheat the oven to 375°F.
2 Heat large skillet over medium-high heat. Add olive oil then add the onion, bell pepper, ground chicken, and taco seasoning. Brown the meat and cook until cooked all the way through and the veggies have softened, 8-10 minutes. Then add the black beans and corn and stir together.
3 Remove from heat and drain excess liquid.
4 Transfer the meat and veggie mixture to greased baking dish.
5 Add the broth, rice, and ½ cup shredded cheese to the baking dish and stir to combine.
6 Cover the baking dish with foil and bake for 50-60 minutes. Remove the foil and add the remaining cheese on top. Add back into the oven and continue to bake for 5-10 minutes.
7 Remove and add toppings like avocado, cilantro, salsa, sour cream, etc.
Notes
- Ground turkey or beef can be substituted for ground chicken.
- Freshly shredded cheese melts best.
- Store leftovers in the refrigerator for up to 4 days.
- This casserole freezes well for up to 3 months.
