Strawberry Ricotta Flatbreads

 Strawberry, Balsamic, & Basil Flatbread! Day 1 of 7 for some fun strawberry recipes 🍓🍓 you know I love a flatbread!!

Ingredients

Strawberry Jam: 

2 cups strawberries 

1/4 cup sugar

Juice of 1 lemon 

Others:

4 flatbreads of choice 

1 cup ricotta cheese 

1/2 red onion, sliced thin 

6 strawberries, sliced 

1 ball fresh mozzarella 

1/4 cup ricotta cheese

1/3 cup caramelized onions about one onion

6 strawberries sliced

1 ball fresh mozzarella

16 fresh mozzarella 

Basil 

Balsamic glaze ( I used store bought from Trader Joe’s) 

Method

Combine the strawberries, sugar, & lemon juice in a pot on the stove.

Bring to a boil then lower the heat & let simmer for 5 minutes 

Preheat oven to 400F 

Brush each flatbread with a little olive oil then add on ricotta cheese, strawberry sauce, onions, strawberries, & mozzarella cheese. 

Bake in the oven for 8-10 minutes, until the mozzarella in melted 

Remove and top with fresh basil and the balsamic glaze.

Enjoy! This makes 4 flatbreads
