Shrimp always has me dreaming of summer and even though summer is a few months away… a girl can dream, right? Considering it’s still below freezing here, I need all the summer vibes I can get! Luckily these easy blackened shrimp can allow me to pretend that it’s warm and sunny outside haha.
This meal comes together in 15 minutes and you can add whatever veggies you have on hand into the skillet with the shrimp. I love meals that you’re able to customize with whatever you’ve got on hand or your personal preference. Makes things easier and less stressful.
I went with kale and zucchini because that’s what I had on hand. But first, I made a mixture of spices. I used garlic powder, chili powder, smoked paprika, onion powder, and cumin.
I mixed all the spices in a bowl, then coated the shrimp with 1 tbsp of olive oil, then added the spice mixture and coated each piece.
I heated my cast iron skillet over medium heat, added more olive oil to the pan to make sure the shrimp didn’t stick, then added the shrimp in. I cooked the shrimp for about 5 minutes before adding in the zucchini and the kale. I didn’t add more spices because there was already plenty in the pan. I cooked for 5-7 more minutes then it was ready to go! Does it get any easier than that?!

Easy Blackened Shrimp

Ingredients
1 lb shrimp
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp cumin
1 tbsp olive oil
Method
- Heat a skillet over medium heat
- In a bowl- mix together the spices
- Pat the shrimp dry.
- In a separate bowl- add the shrimp and then coat with 1 tbsp of olive oil. Add the spices and make sure each piece is coated.
- Once the pan is hot, add a little bit of olive oil to the pan then add the shrimp.
- Cook the shrimp for 5 minutes then add in veggies if you want! I added kale and zucchini
- Cook for another 5-7 minutes, until the shrimp are a little brown around the edges.
- Enjoy!
