I have seen this breakfast all over Instagram and to be honest, I thought it would be SO complicated to make. I was so wrong there! All you need is some type of spiralizer for your zucchini (I use this Kitchen Aid attachment that I got for Christmas last year but also love this Amazon one). I am obsessed with my Kitchen Aid spiralizer- it makes the perfect size zoodle. It keeps them nice and crispy because they aren’t too thin. I actually spiralized my zoodles a few days before making this recipe!
I spiralized my zucchini, I heated my cast iron skillet over low/ medium heat, formed little zucchini baskets (basically just arranged my noodles in a circle), and then cracked the eggs in! Truly it is so simple! No complicated instructions here.
I sliced my avocado while the eggs cooked. You’ve always got to multi task haha. They took longer than normal, about 10 minutes to cook. If you don’t like sunny side up eggs- you can easily flip these with a spatula!
Topped mine with red pepper flakes and they were good to go! I can easily get intimidated by ‘fancy’ recipes I see on Instagram but this one could not have been simpler! I actually ate these along with a piece of toast because I was craving some carbs- seriously sooo good over fresh bread!

Zucchini Noodle Egg Baskets
A simple paleo, gluten free, grain free breakfast that is ready in 10 minutes!
Ingredients
1 medium sized zucchini
2 eggs
Oil of choice- I like avocado oil
Red pepper flakes
Avocado
Method
- Spiralize the zucchini- I used my Kitchen aid attachment
- Heat a skillet over low/medium heat, add avocado oil
- Form little baskets with the zoodles and crack eggs in
- Cook for about 10 minutes- until the eggs are done to your liking!
- Served with avocado and red pepper flakes
