I love this easy gluten free pasta salad recipe because it’s loaded with vegetables and really simple to make. All you have to do is boil some pasta and chop your veggies, that’s it! I like simple recipes in the summer because who wants to spend hours in the kitchen when it’s so hot? No thank you. This recipe doesn’t require you to turn your oven on either which is nice.

You can use a bunch of different veggies in this recipe. You can use cucumbers, peppers, onions, tomatoes, mushrooms, a lot of veggies you’d have on hand would work! Feel free to get creative and switch things up.

Easiest Healthy Pasta Salad (gluten free)

Ingredients

  • 12 ounce chickpea pasta
  • 1 diced avocado
  • 1 cup fresh mozzarella
  • 1/3 cup sliced tomatoes
  • 1/3 cup sliced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup olive oil
  • 1 tsp garlic
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Method

  1. Cook the pasta according to the package instructions
  2. Add in all the veggies
  3. Add olive oil and the spices
  4. Mix with a spatula
  5. Serve!
