Chicken Fajita Burgers

A delicious, flavorful chicken burger recipe that’s ready in under 20 minutes! We are huge fans of chicken burgers over here because they are so much juicer than turkey burgers. If you haven’t used ground chicken in a recipe, give these chicken fajita burgers a try! They’ll change your mind if you’re a little hesitant.

I paired these fajita chicken burgers with my favorite type of bun- a sweet potato bun! If you’re following a paleo or whole30 diet, it’s so easy and inexpensive to make. You really only need two ingredients: olive oil and sweet potato. I have the full recipe for the sweet potato buns at the bottom of the post.

What You Need For These Burgers:

Ground Chicken

You can sub ground turkey! We like ground chicken more because we find they don’t dry out as easily.

Vegetables

I used diced bell pepper, diced onion, chopped spinach, and chopped mushrooms. You can really use any veggies that you would normally use in a fajita recipe. If you aren’t paleo or following whole30, you could even add corn or black beans.

Spices

I made my own spice mixture with chili powder, garlic powder, onion powder, cayenne, and salt. I also love this pre-made fajita mixture here.

Sweet Potato

This is only if you want to make the sweet potato buns! Full recipe for the sweet potato buns is at the bottom of this post.

What Pan I Used:

I used a cast iron pan because I find it gives food the best flavor! You can use any pan you want but that’s just my favorite.

Topping Ideas:

Now what should you add to these tasty burgers?! The options are endless! Honestly anything you normally add to fajitas will be great- guac, salsa, sour cream. You can’t go wrong with any of those! Or you can go with whatever you normally top a burger with. That’s the great thing about this recipe- it’s so versatile!

Chicken Fajita Burgers

Chicken Fajita Burgers (paleo, gluten free, whole30)

Ingredients

1 lb ground chicken
1/4 cup diced bell pepper
1/4 cup diced onion
1/4 cup chopped spinach
1/4 cup chopped mushrooms
1 tsp chili powder
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne
1/4 tsp salt

Method

  1. Heat a skillet over medium heat and sauté the pepper, onion, mushrooms, and spinach for 3-4 minutes.
    1. In a small bowl, mix all the spices together  to create your fajita seasoning (you could use a pre-made packet as well!)
  2. In a large bowl, add the ground chicken, sautéed veggies, and spice mixture. Mix everything together with a spatula then form burgers.
  3. Makes 5-6 burgers.
  4. Add olive oil to your skillet heated over medium heat, add the burgers, and cook for 7 minutes on each side. I always use a meat thermometer to check the temp! If it’s not quite there, stick them in the oven at 400F for a few minutes.
  5. Store in the fridge for 4-5 days or freeze for a few months

Sweet Potato Buns

These sweet potato buns are the easiest paleo and gluten free bun to make for any burger recipe!

Ingredients

1 large sweet potato

1 tbsp olive oil

1/4 tsp salt

1/4 tsp pepper

Method

  1. The key is to find a sweet potato that is large and round
  2. Slice the sweet potato into 1/2 inch rounds. If it’s too tough to slice, microwave for a minute or two to soften it a bit
  3. add to a bowl and coat with the olive oil and salt and pepper.
  4. Place on a greased baking sheet
  5. Heat oven to broil or 500F.
  6. Place the sweet potatoes on the bottom shelf. It has to be on the bottom or they burn
  7. Cook for 12-14 minutes!
  8. Enjoy
