This salmon salad with green goddess dressing is a 15 minute meal that is so tasty! You don’t need much time or many ingredients to make this meal. Also who says you have to just make it a salad?! Make the salmon and the dressing to throw in a wrap, sandwich, etc. The possibilities are endless! I like that this dressing is oil free, it feels a little lighter for summer!

What To Pair With This Dressing:
This dressing is great on salads but it can also be used for many other things! I like to use it on burgers, on sandwiches, in wraps, and on toast! It’s a little thicker so it can be used as a spread too. I made a salmon sandwich with leftovers from this meal. I toasted a bun, added onion, spinach, leftover salmon, and topped it with this green goddess dressing. I love finding ways to reuse leftovers in a different way! It keeps meals interesting throughout the week. I know a lot of people aren’t fans of leftovers but try eating them in a different way than the original meal. For example, breaking up a burger to make a burger bowl. Or using leftover salmon for a salmon blt- one of my personal favorites! This salmon salad with green goddess dressing is a winner no matter how you use leftovers though.

Salad Additions:
Toppings are a must in all salads! I like to normally do a protein, fat, carb, and lots of veggies. I like to add either avocado or nuts to salads for the healthy fat. I like to do tofu, salmon, chicken, or chickpeas for a meal protein source normally. And then of course a little cheese if I have it on hand! I used feta here, tomatoes, avocados, and onions. Nothing complicated, just simple things I had in the fridge.

Ingredients
Salmon:
1 fillet of salmon
1/2 tsp pepper
1/2 tsp salt
1 tsp garlic powder
1/2 tsp paprika
Green Goddess Dressing:
1 avocado
2 cloves garlic
2 tbsp lemon juice
1/4 cup basil
1/4 cup greek yogurt
Salt & pepper taste
Method
- Mix the spices in a small bowl
- Brush the salmon with olive oil and seasoning
- Air fry at 400F for 12 minutes
- Green goddess dressing:
- Mix together in a food processor
- Assemble the salads
- makes enough dressing for about 4-5 salads so I doubled the salmon
