These sugar cookie baked oats are gluten free, vegan, and so easy to make! One of my favorite breakfasts of 2021 because it legit takes like a sugar cookie. Top with a little bit of icing & you can’t go wrong! I added festive sprinkles when I made them to make them even more sugar cookie like!

Sugar Cookie Baked Oats. Vegan & Gluten Free
Ingredients
- 1 cup gluten free old fashioned rolled oats
- 3/4 cup oat milk (use any milk you want)
- 1 tbsp coconut sugar (use whatever sugar you want)
- 1 tbsp vanilla protein (sub 1/2 tsp vanilla extract)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
Method
- Blend it all together
- Pour into a small greased baking dish
- Bake at 400F for 18-20 minutes
- Icing:
- 1-2 tbsp powdered sugar mixed with a tiny splash of milk!
