A super simple + versatile recipe that makes cookies perfect for any time of the day! Breakfast, mid morning snack, afternoon snack, after dinner snack, dessert- I’ll make any excuse to eat these haha. They have oatmeal in them so they’re definitely breakfast approved haha. Plus they’re made with minimal ingredients and ready in less than 15 minutes. These 4 Ingredient Oatmeal Cookies are a must make!

Recipe Steps:
The best thing about this recipe is how easy it is! Yes they also taste great but in my opinion recipes always taste better when they require less work haha.
In a bowl, you’ll whisk an egg before adding in the other 4 ingredients.
You’ll mix everything together well with a spatula then add in any additions you want (See below for my favorite add ins).
Then take a cookie scoop and add the batter to a greased baking sheet. Then flatten the cookies with a fork.
You’ll bake the cookies for 12-14 minutes. Then let the cool before eating them all in one sitting. Kidding…. kind of haha.
Recipe Substitutions:
For the peanut butter– sub any other nut butter like a creamy almond butter or a tasty cashew butter. For nut free options, use some sun butter.
For the maple syrup– you can sub honey.
For the egg- you can sub a flax seed egg (1 tbsp flaxseed meal + 2.5 tbsp water mixed together and let thicken for 5 minutes)
Optional Add Ins:
These 4 ingredient oatmeal cookies are so simple but also allows for many add in ideas! Some of my favorites:
Dried fruit- raisins, prunes, dried berries
Chocolate Chips- these are my current favorite!
Chopped nuts- pecans are absolutely delicious in these.
Flavored protein or collagen. This vanilla collagen is SO good.
Or a splash of some vanilla extract. I love this alcohol free one .

Method
- Preheat oven to 350F
- In a bowl, whisk 1 egg
- Then add in the oatmeal, peanut butter, and maple syrup.
- Mix well with a spatula.
- Fold in any add ins you’d want- nuts, chocolate chips, dried fruit.
- Take a cookie scoop and add to a greased baking sheet.
- Take a fork then flatten the cookie.
- Makes 15 small cookies.
- Bake for 12-14 minutes, let cool, then eat! I added more pb on top of my cookies.
