I’m back with another copycat recipe…this is a delicious take on my favorite Panera item: Chipotle Chicken Sandwich! It’s a perfect lunch recipe. I feel like it’s so easy to eat boring lunches during the busy work week but it gets old fast. Having some healthy recipes like this one is a great way to spice it up a bit! Made with fresh ingredients, this chipotle chicken sandwich is packed with protein, veggies, and nutrients. It’s a great meal prep lunch idea or office lunch idea, too! What You Will Need For This Recipe:

Bread

Rotisserie chicken 

Avocado

Spinach 

Gouda 

Mayo

Chipotle peppers in adobo sauce 

Garlic powder

Chipotle Chicken Sandwich

A delicious take on my favorite Panera sandwich, this chipotle chicken sandwich is the perfect lunch!

Ingredients

6 slices of bread
2 cups shredded rotisserie chicken
1 avocado
1/2 cup spinach
3 slices gouda

Chipotle Sauce:
1/4 cup mayo
1/4 cup chipotle peppers in adobo sauce
1/2 tsp garlic powder
1/2 tsp salt

Method

  1. Chop the chipotle peppers 
  2. In a small bowl, mix together the mayo, chipotle peppers, salt, & garlic 
  3. Add sauce to one piece of bread then layer it with chicken, cheese, avocado, & spinach 
  4. Make into a sandwich and repeat for the other 2 sandwiches 
  5. Bake at 350F for 15-18 minutes until the cheese is melted and the bread is nice and toasty! 
  6. This makes 3 sandwiches, enjoy!
