Small Batch Chocolate Chip Cookies (paleo, gluten free)
The perfect dessert when you just want a little something extra! Also great if you live alone and don’t want to make a big batch of something. Or if you live with people who aren’t huge dessert people (I know, hard to believe people like that exist but I live with one). My husband isn’t anti dessert he just isn’t super obsessed with it like I am. So these small batch chocolate chip cookies recipe are perfect for our household of two!

Recipe Steps:
In small bowl, separate the egg yolk from the egg white. Then in a mixing bowl, add in the egg yolk and whisk. Add in the almond flour, maple syrup, coconut sugar, cashew butter, baking powder, and vanilla. Mix it together well.
Then add in your chocolate chips of choice. Fold them in. Then line a pan with parchment paper. Form 3 cookies.
Bake at 350F for 12 minutes. Let cool for 5 minutes before eating.

Ingredients
1 egg yolk
1/3 cup almond flour
2 tbsp coconut sugar
2 tbsp cashew butter
1 tbsp maple syrup
1/4 tsp vanilla
1/4 tsp baking powder
2 tbsp chocolate chips
Method
- In a small bowl, separate the egg yolk and egg white*
- Then add the egg yolk to a mixing bowl, whisk.
- Add in everything except the chocolate chips.
- Mix well.
- Then add in your chocolate chips and mix them in.
- Line a pan with parchment paper and form 3 cookies.
- 350F for 12 minutes
- Let cool on the baking sheet for 5 minutes
Notes
*You can turn on the skillet and scramble to egg white with some salt & pepper for a little snack while your cookies bake if you don’t want to waste
