5 Ingredient Oatmeal Cookies

These cookies are the perfect easy breakfast for meal prep. Made with only 5 simple ingredients, and packed with protein from collagen. You can add in lots of different treats to take these to the next level- chocolate chips, nuts, raisins, etc. They’re easily customizable to whatever you enjoy! 5 Ingredient Oatmeal Cookies

Recipe Steps:

This recipe is seriously so simple! You truly only need 5 ingredients. Below are the ingredients that I used.

You’ll mash the bananas in the bowl and then add the rest of the ingredients in. Mix together with a spatula, not a hand mixer. You don’t want to crush the oatmeal. Form cookies with your hands. You can spray your hands with nonstick spray so it’s easier to form them without the batter sticking to your hands.

Why Collagen:

I love to add collagen into my recipes because it gives them more protein. Also I love the benefits I personally see from adding collagen into my diet. I think adding it in has helped with my joint health as well as my hair/skin. But everyone is different and sees different results. Always do what works best for you and remember that I’m not a doctor.

Not only do I like adding it to easy baked goods like this, I add collagen daily to my coffee. It adds 9 grams of protein and only 45 calories. I like to add a flavored one because it’s a healthier alternative to creamer in your coffee. Plus it dissolves right in and isn’t messy like adding protein into your coffee. Add a little unsweetened almond milk and it’s the perfect way to start the day!

What Collagen I Use:

I love this Ancient Nutrition Multi Collagen. All of the products they make are incredibly high quality, ethically sourced. Whenever I’m buying animal protein of any kind, that’s always what I look for. None of their collagens have an artificial flavor taste at all, which is important to me as well. Also it isn’t chalky like some protein powder can be. You can find the collagen I used here. Every product they make is not only delicious but also the best quality around!

The collagen adds the perfect touch to these breakfast cookies. Adds a little bit of protein with compromising the texture or taste. The added protein in the morning helps keep me fuel longer until my next meal!

Add in Options:

I added peanut butter and melted chocolate to my cookies but there are endless options for these cookies! You could add chocolate chips in, chopped nuts, raisins, prunes, dates, fruit- seriously so many options! I love anything that involves chocolate and peanut butter so of course that’s what I went with haha. These 5 ingredient oatmeal cookies are great because of how versatile they are!

These 5 ingredient oatmeal cookies are so simple to make and delicious! A great healthy meal prep breakfast as well as a healthy, kid friendly breakfast, snack, or dessert. 5 Ingredient Oatmeal Cookies

Ingredients

2 cups quick oats

2 mashed bananas

2 tbsp maple syrup

2 scoops Ancient Nutrition collagen

3/4 cup peanut butter (sub any nut butter)

 

Method

  1. In a bowl, mash the bananas.
  2. Then add in everything else and mix together with a spatula.
  3. Line a pan with parchment paper.
  4. Form 9-10 cookies. I spray my hands with a little non stick spray first because these cookies are super sticky!
  5. Then bake at 350F for 14-16 minutes.
  6. Remove and let cook a little bit longer on the baking sheet.
  7. Then I drizzled a little peanut butter and melted chocolate on top
