These vegan pancakes are the perfect healthy, plant based recipe to start the day! Light and perfectly crispy on the outside. These are vegan, egg-less, paleo, and gluten free. They’re perfect topped with a little powdered sugar and maple syrup. Or some fresh seasonal fruit now that it’s summertime! Chocolate chips would also taste pretty good melted on top. Basically- you can’t go wrong when it comes to these cakes!

I love pancakes ( check out my fluffy banana pancakes and my sweet potato pancakes) and had yet to nail down a good vegan one. The problem was, I just don’t like flax egg pancakes. I don’t mind them in other recipes but in pancakes they just weren’t my thing. But these vegan pancakes don’t involve flax eggs!
Substitution Options:
I haven’t tested a sub for every ingredient but I’ll list some of the easy ones that I have.
For the tapioca flour, you can sub corn starch. Corn starch isn’t paleo though.
For maple syrup, you can sub honey or a sugar free maple syrup.
For the applesauce, you can sub more coconut oil or butter.
For the coconut oil, you can sub ghee or butter.
Take a big bite and enjoy! I topped my vegan pancakes with lots of maple syrup and powdered sugar.

Ingredients
3/4 cup almond flour
1/4 cup tapioca flour (can sub cornstarch)
1 tsp baking powder
1 tbsp maple syrup
2 tbsp applesauce (can sub equal amount coconut oil or butter)
1 tbsp softened coconut oil (can sub butter/vegan butter)
1/4 cup almond milk
1 tsp cinnamon
Method
- Mix all of the ingredients together in a bowl. Make sure you don’t melt the coconut oil, it just needs to be a little soft.
- Mix everything together.
- Heat a skillet over low medium heat
- Grease the skillet and add a spoonful of batter to it.
- Cook for 2 mins, flip, cook for 2 more.
- Remove and repeat. Makes 6-7 small pancakes.
