Chicken Parmesan Stuffed Spaghetti Squash

I need a weekly series on my blog right now for highlighting different spaghetti squash recipes and difference pizza recipes- basically the only two things I’m making right now! Those + hot chocolate. What more do you need in the winter? Give me all the warm and cozy meals. Nothing is better than making this chicken parmesan stuffed spaghetti squash, curling up on the couch, and watching the Bachelorette!

What you need for this recipe:

Chicken Breasts

Spaghetti Squash

Red Pasta Sauce

Parmesan Cheese

Garlic Powder

Italian Seasoning

Olive Oil

Recipe tips:

For the spaghetti squash, if it’s too hard to cut in half, microwave it! It doesn’t take long- 3-4 minutes. Then it’s a little softer and easier the slice

For the chicken- you can use pre made grilled chicken nuggets or if you want a more traditional chicken parmesan recipe- use your favorite breaded tenders! Just skip the step of cooking the chicken.

Chicken Parmesan Stuffed Spaghetti Squash

Ingredients

2 chicken breasts 

1 tsp garlic powder 

1/2 tsp italian seasoning

1 tbsp olive oil 

1 medium spaghetti squash 

1 cup red pasta sauce of choice 

1/2 cup parmesan cheese

Method

  1. Preheat the oven to 400F 
  2. Cut the spaghetti squash in half and remove the seeds 
  3. Place face down on a greased baking sheet 
  4. bake for 40 minutes
  5. For the chicken, heat a pan over medium heat 
  6. Add the olive oil 
  7. Cut the chicken into nuggets and then add to the pan 
  8. Sprinkle with the garlic and italian seasoning 
  9. cook for about 4 mins on each side. 
  10. Mix in the sauce and stir 
  11. Remove the spaghetti squash 
  12. Pull some of the squash off the sides and put into the bottom of the squash 
  13. Add the chicken/sauce mixture 
  14. Then sprinkle with parmesan cheese 
  15. Place back in the oven for 8-10 minutes 
  16. Remove and enjoy!
