Fried Goat Cheese Salad

This is the perfect spring or summer salad with delicious goat cheese bites and an easy strawberry balsamic vinaigrette. All the good things – sweet, savory, crispy. It’s gluten free and so easy to put together! I’m excited to put this on rotation all summer long for a quick, light meal. Can’t wait to see what you guys think! 

What You Need For This Recipe:

Goat cheese

Coconut flour

Eggs

Gluten free panko breadcrumbs

Maple syrup

Olive oil

Balsamic vinegar 

Apple cider vinegar 

Chopped strawberries 

Salt and pepper 

Strawberries

Spring mix

Onions

Feta

Pistachios

Ingredients

Goat Cheese Bites:

10 oz log of goat cheese

1/4 cup coconut flour

2 eggs

1 cup gluten free panko breadcrumbs

Strawberry Balsamic Vinaigrette:

1 tbsp maple syrup 

4 tablespoons olive oil

2 tbsp balsamic vinegar 

1 tsp Apple cider vinegar 

1/2 cup chopped strawberries 

Salt and pepper 

The rest of the salad: 

Strawberries + spring mix + onions + feta +pistachios

Method

Goat Cheese Bites: 

In one bowl add the coconut flour. In another shallow bowl whisk in the eggs with. Then in the final bowl add the breadcrumbs.

Slice the goat cheese into about 8-9 slices. 

Coat 1 slice of goat cheese with flour, then dip into the egg mixture, then coat in breadcrumbs.

Repeat for each slice 

Place goat cheese on a plate or cutting board and freeze for 15-20 minutes.

Then remove from the freezer

Heat a pan over medium heat & add olive oil 

Then add the goat cheese and cook until browned, about 2-3 minutes per side

While the goat cheese is in the freezer, make the dressing. 

Strawberry Balsamic Vinaigrette:

Add it all to a blender and mix it together until smooth!
