BBQ Chicken Spaghetti Squash
I am so ready for winter to end but so not ready to say goodbye to spaghetti squash being in season. They are so affordable and they make so much food. Hello leftovers for days! Plus you can top a spaghetti squash a ton of different ways. But trust me, this BBQ chicken spaghetti squash is the only one you’ll want 😉
I made bbq chicken for the first time last week (check out my easy bbq stuffed sweet potatoes) and I am OBSESSED. Seriously why did I wait so long to hop on this train?! You can add the chicken to sooo many recipes- I made leftover chicken tacos that were soooo tasty. I am in love with any recipe that allows for leftovers, just one one the many reasons I love this recipe!

Now let’s get back to this recipe- BBQ chicken spaghetti squash. To start- you need to slice the spaghetti squash in half. This can be pretty tough to do if the spaghetti squash is tough (which it normally is) so I like to microwave mine a few minutes to get it softer and easier to slice. You could also boil it if you have a pot big enough.
Once you slice it in half, take a spoon and scoop out the seeds and the middle gunky stuff. You can save the seeds and make so many delicious things with them. Pinterest has so many great ideas!
Then it’s time to bake the spaghetti squash. Put it face down on the pan and bake at 400F for 50 minutes.
When there’s about 20 minutes left to go on the spaghetti squash, it’s time to start making the bbq chicken. Cook two chicken breasts in a skillet over medium heat for 6 minutes on each side. Then transfer to a bowl and take two forks and shred the chicken. Then add 1 cup paleo BBQ sauce. Mix it all together.
Dice an onion, dice a bell pepper, cut up some cilantro, and whatever other toppings you want!
When the spaghetti squash is done cooking, remove, then take a fork and pull out the ‘spaghetti’ part and put it in a bowl, you’ll add it back in later. Add in your chicken, onions, peppers, cilantro into the squash bowl and then also the spaghetti squash. Serve warm and save any leftover spaghetti squash.

BBQ Chicken Spaghetti Squash
This paleo bbq chicken spaghetti squash is a great healthy dish the whole family will enjoy!
Ingredients
1 Spaghetti Squash
2 chicken breasts
1 cup paleo bbq sauce
cilantro
onion
pepper
olive oil
Method
- Preheat oven to 400F
- Slice the spaghetti squash in half. If it’s too tough to slice, microwave it for 5 minutes to soften it.
- Then take a spoon and scoop out the seeds and the middle part. You can save the seeds and make delicious toasted seeds.
- Spray a pan with non stick spray and put the squash face down. Bake at 400F for 50 minutes
- When there’s 20 minutes left to go on the squash, heat a skillet over medium heat. When the skillet is hot- add a little bit of oil and the 2 chicken breasts.
- Cook for 6 minutes on each side- until the chicken is done all the way through
- Add cooked chicken to a bowl and shred with two forks. Then add 1 cup of bbq sauce and mix together
- Dice an onion and pepper.
- When the spaghetti squash is done- remove the spaghetti squash with a fork and put aside.
- Stuff the squash boat with the bbq chicken, onion, peppers, cilantro, and some of the squash.
