It’s so fun putting a fancy twist on childhood classics! One of my best to date is this blackberry, bacon, & goat cheese grilled cheese. This sandwich is so good- basically gourmet! All of the sweet and savory flavors are delicious together. If you like spicy food, try adding jalapeños to it, too – it gives it an extra kick. You can put this together for an elevated but easy weekday lunch using just a few ingredients. Seriously, you’re gonna love it!

I used a premade crust to keep things simple. I also use a premade caesar dressing but you could make your own. I’m going to make a vegan version of this soon!!

2 slices of bread 

1 tbsp butter 

23 ounces goat cheese, softened

1/4 cup fresh blackberries (about ½ cup), mashed 

34 slices of cooked bacon 

Optional: jalapeños for some spice


Heat a skillet over medium heat

Add the butter when the pan is warm 

On one piece of bread, add the cooked bacon 

On the other, add the goat cheese & bacon 

Combine into a sandwich 

Add to the skillet and cook for about 3-4 minutes on each side 

Remove, slice, and enjoy! 

Makes 1 sandwich
