Cake Batter Cookie Bars

A healthy dessert that would be so perfect for Valentine’s Day! Skip the chocolate because it’s so overdone haha. Jk jk I’m all for the chocolate desserts but these are a nice switch up! I’m actually more of a vanilla fan over chocolate so these cake batter cookie bars are right up my alley. Paleo, gluten free, and relatively simple to make!

Cookie Bar Recipe Steps:

This recipe is easy to make and requires only one bowl and one pan. You’ll whisk the eggs first then add in the rest of the ingredients besides the sprinkles. Save those until after you have everything mixed together.

After you add the sprinkles in, fold them into the batter with a spatula. Then line a brownie pan with parchment paper and press the dough into the pan.

Bake at 350F for 25-28 minutes! Wait 5 minutes and let them cool before cutting.

Why I Add Collagen:

I love to add collagen into my recipes because it gives them more protein. Also I love the benefits I personally see from adding collagen into my diet. I think adding it in has helped with my joint health as well as my hair/skin. But everyone is different and sees different results. Always do what works best for you and remember that I’m not a doctor.

Not only do I like adding it to easy desserts like this, I add collagen daily to my coffee. It adds 9 grams of protein and only 45 calories. I like to add a flavored one because it’s a healthier alternative to creamer in your coffee. Plus it dissolves right in and isn’t messy like adding protein into your coffee. Add a little unsweetened almond milk and it’s the perfect way to start the day!

Whenever I’m buying animal protein of any kind, that’s always what I look for. None of their collagens have an artificial flavor taste at all, which is important to me as well. Ingredients

2 eggs
1 cup almond flour
2 tbsp coconut flour
2/3 cup cashew butter
1/2 cup coconut sugar
1/4 cup maple syrup or honey
2 tbsp Ancient Nutrition vanilla collagen
1 tsp vanilla
1 tsp baking powder
Sprinkles

Method

  1. Whisk the eggs in a large bowl.
  2. Then add in the rest of the ingredients besides the sprinkles
  3. Use a spatula to fold those into the batter.
  4. Line a brownie pan with parchment paper and spread the batter evenly into it. You can add some more sprinkles on top.
  5. Bake for 25-28 mins. Wait 5-10 minutes until they cool to remove from the pan.
