Carrot Cake Donuts
These healthy carrot cake donuts are paleo, gluten free, and so tasty! They have some hidden veggies in there too which is always a win win. The perfect carrot cake flavor that isn’t overwhelming. I love a cake donut and these have a great cake texture. Ready in under 20 minutes and topped with an easy icing. They reheat well or you can eat them without heating them up!

If you’ve followed me for a little bit, you know one of my favorite recipes to make for breakfast are donuts! You can change up the flavors to make them seasonal. See below for some of my favorite donut recipes. They always hit the spot and make me feel fancy. If you haven’t tried making donuts at home, you need to ASAP. They’re way easier than you would think!
Recipe Steps:
Here’s everything you need for this recipe. Almond flour, vanilla extract, eggs, cinnamon, ginger, baking powder, honey/maple syrup, carrots, and pecans.
Preheat your oven to 350F. Grab a large mixing bowl and whisk 2 eggs. Then add in all of the other carrot cake donut ingredients. Mix everything together well with a spatula. Don’t use a mixer because you’ll blend the carrots and pecans too much.
Add to a greased donut pan, filling about 3/4 of the way. Put them in the oven and bake for 18-20 minutes. This recipe makes 7 donuts. Let the donuts cool before removing and top with some easy icing.
Icing Options:
Paleo option: coconut butter melted and mixed with 2 tbsp maple syrup
Other option: 1/2 cup powdered sugar + 2 tsp almond milk mixed together.
Wait for the donuts to cool then add the icing on top. You can let the icing harden or eat right away.

Ingredients
Carrot Cake Donuts
2 eggs
1 cup almond flour
3 tbsp maple syrup
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1 tsp vanilla
1 tsp baking powder
1/2 cup shredded carrots
1/4 cup chopped pecans
Icing:
Paleo option:
1/4 cup coconut butter
2 tbsp maple syrup
Other option:
1/2 cup powdered sugar
2 tsp almond milk
Method
- Preheat oven to 350F
- Whisk 2 eggs then add in all of the other carrot cake donut ingredients
- Mix everything together well.
- Add to a greased donut pan, filling about 3/4 of the way.
- Bake for 18-20 minutes
- Makes 7 donuts.
