Chipotle Chicken Sandwich
A delicious take on my favorite Panera sandwich, this chipotle chicken sandwich is the perfect lunch!
Ingredients
6 slices of bread
2 cups shredded rotisserie chicken
1 avocado
1/2 cup spinach
3 slices gouda
Chipotle Sauce:
1/4 cup mayo
1/4 cup chipotle peppers in adobo sauce
1/2 tsp garlic powder
1/2 tsp salt
Method
- Chop the chipotle peppers
- In a small bowl, mix together the mayo, chipotle peppers, salt, & garlic
- Add sauce to one piece of bread then layer it with chicken, cheese, avocado, & spinach
- Make into a sandwich and repeat for the other 2 sandwiches
- Bake at 350F for 15-18 minutes until the cheese is melted and the bread is nice and toasty!
- This makes 3 sandwiches, enjoy!
