This Winter Quinoa Salad is such an easy & tasty meal! Anything with goat cheese is my favorite – I’ve been including it in everything lately. Is there anything better than a hearty, seasonal salad? I love using in-season ingredients throughout the year – salads don’t having to be boring. Especially with this delicious dressing.

Cooked quinoa

Mixed greens

Diced Apple

Peeled & Diced Orange

Pomegranate seeds


Goat cheese

Apple cider vinegar 

Olive oil

Garlic powder 

Dijon mustard

Winter Quinoa Salad

Such an easy & tasty salad! Anything with goat cheese is my favorite. This salad doesn’t take long to make & it is delicious!

1 1/2 cups cooked quinoa

2 1/2 cups mixed greens

1 small apple, diced

1 orange, peeled &  diced

1/3 cup pomegranate seeds

1/3 cup pistachios 

2 ounces goat cheese


3 tablespoons apple cider vinegar 

1 1/2 tablespoons olive oil

1 tsp garlic powder 

2 teaspoons dijon mustard

2 teaspoons honey

Salt and pepper to taste


  1. Cook quinoa according to package instructions 
  2. Let it cool then assemble the salad 
  3. Add spinach, quinoa, orange slices, pomegranate seeds, apples, pistachios, & goat cheese to a large bowl 
  4. Toss the salad 
  5. In a small bowl, whisk the dressing ingredients together 
  6. Pour over the tossed salad 
  7. Serve & enjoy!
