Fluffiest Banana Pancakes

Introducing the fluffiest pancake recipe ever! If you love making minimal ingredient meals- say hello to your new favorite breakfast. Made with only 6 ingredients- these pancakes are simple but so. dang. tasty! The fluffiest banana pancakes ever.

Now these pancakes only have 6 ingredients- but if you want an even simpler pancake recipe (I know seems impossible, right?!) check out my Paleo Banana Pancakes that are sooo easy. Also my yummy Sweet Potato Pancakes are a winner if bananas aren’t your thing!

But if you are down to enjoy the fluffiest pancakes ever- get ready to be obsessed with this recipe! Made with only eggs, bananas, almond flour, baking powder, cinnamon, and vanilla- does it get any better?! Seriously- I get so intimidated by recipes that are 10+ ingredients. Give me simple, easy recipes all day long!

First, I whisked the eggs together, then I added mashed banana. The key: leave the banana a little lumpy. It gives the pancakes a better texture and helps them hold up a little better. Then add in the rest of the ingredients and mix together.

I always cook my pancakes in a cast iron skillet– I think it gives them such a great crisp on the outside. But you’ve got to make sure you use some type of oil or they stick. Nothing worse than making a recipe only to have it fail and get stuck to the pan.

This recipe made about 8 small pancakes. I split it into 2 servings but do whatever works for you 🙂 I love to make a double batch of pancakes and freeze the others for later. Then you just pop them in the toaster and reheat them.

I topped my pancakes with plain kefir, warmed blueberries, and extra bananas. Simple toppings to go with a simple recipe. Simple doesn’t have to mean tasteless or boring though. Trust me, these are not 😉 Hope you enjoy as much as I did!

Fluffiest Banana Pancakes

These healthy, easy pancakes are made with only 6 ingredients and are so tasty!

Ingredients

1 ripe banana

3 eggs

1 1/2 cup almond flour

1 1/2 tsp baking powder

1 tsp vanilla

1 tsp cinnamon

Method

  1. In a bowl, whisk the eggs. Mash the banana and add it in. Mix together but leave the banana a little lumpy- it helps keep the pancake texture
  2. Add in the almond flour, vanilla, cinnamon, and baking powder.
  3. Mix everything together but it’s okay if it’s a little lumpy- it gives it a better texture.
  4. Heat a skillet over low medium heat and add in whatever oil you use- I use coconut oil.
  5. Use a spoon and spoon 2 scoops of the mixture. Cook until the batter starts to bubble and flip.
  6. Makes 8 small pancakes
