Paleo Gingerbread Banana Pancakes

Finally adding one of my favorite recipes to my website! The easiest paleo pancake recipe in the world. I know this is a pretty common recipe so I’m not taking credit for it and I don’t know who originally created it. I’ve been making this recipe since I started living on my own in college. It’s easy, cheap, and filling! Added a little festive twist this morning making these paleo gingerbread banana pancakes one of my new favorites!

Basically, I am gingerbread obsessed! I have been making a gingerbread latte every morning since Halloween haha. If you’re gingerbread obsessed, check out my baked gingerbread oats, I pretty much totally skip over pumpkin. In my opinion, gingerbread >>> pumpkin. But don’t get me wrong, anything in pancake form and I’m down 😉

I just love mini pancakes. First off, they’re wayyyy easier to flip. Second, it feels like you have so much more food to eat! Give me easy + more food every day 😉 I also am slightly obsessed with stacking them which is much easier with mini pancakes haha. The key to making banana pancakes is to not completely mash the banana. Leave it a little chunkier and it gives the pancakes a better texture. I like to add in collagen or protein powder so it helps keep me full longer. Collagen doesn’t add any flavor to it but a vanilla protein powder would be amazing as well.

This recipe makes about 7-8 mini pancakes! You can share them or eat them all yourself 😉 I prefer not to share haha. But you could also double to recipe if you need to feed a family! Happy Holidays and Merry Christmas friends!!

Paleo Gingerbread Banana Pancakes

These gingerbread banana pancakes are paleo, gluten free, healthy, and SO easy to make!

Ingredients

2 eggs

1 banana

1 tsp cinnamon

1 tsp nutmeg

1 tsp ginger

1 scoop protein powder or collagen

Method

  1. Heat a skillet over low medium heat
  2. In a bowl, whisk two eggs together
  3. In a separate bowl, mash banana but not completely, leave it a little chunky.
  4. Add the mashed banana into the bowl with the eggs and mix together
  5. Add the spices and the protein/collagen into the bowl and mix together
  6. When everything is mixed together, make small pancakes in the skillet. I use about a big spoonful. If you make them small, they’re easier to flip.
  7. Served here with honey, cinnamon, and bananas on top.

Notes

You can add 1/2 tsp of baking powder to give them a little fluffiness if you want!
